Just Add Garlic

Today is the first time I have cooked in….forever. It’s easier in so many ways to eat out, but then, when I’m in the kitchen, I forget how incredibly comforting it is to chop and stir.

Yesterday, I did go to the grocery store and one of the things I picked up with boneless chicken breasts. I’m to the point that I rarely buy meat full price – I buy what is on sale. This morning, I threw one package of chicken breasts in the crockpot with a drizzle of olive oil, fresh ground pepper and lots of garlic (we love garlic). When we came home, the house smelled amazing.

Oh, side note. We did make it to the mall. Kiddo scored big time, by the way: a pair of shoes, four pairs of shorts, and half-a-dozen t-shirts.

The question, then, was what to do with the chicken. I love crock pot chicken, by the way. Something about the way it cooks . Chicken Spaghetti sounded good – as did Chicken Tetrazzini – and Chicken Divan. So, I made something in the middle. I made a white sauce – consisting of butter, chicken broth, flour, fresh ground pepper, milk, and a teeny bit of nutmeg.

It was when I was making the sauce that it hit me that I miss cooking at times – and how incredibly soothing it is. The combination of the butter and flour as it makes a thick paste – and then the addition of broth and milk….ahhhhh……

Combine that while whole-wheat pasta and all that yummy chicken, and then the white sauce. Then, I topped it off with a mixture of bread crumbs and Parmesan cheese. We will open a can of little green peas to serve with it. To be honest, I can eat an entire can of little green peas all by myself.

I still have some work to do and laundry to fold. But at least we have dinner.
